Baked apples

You know the smell of baked apples and cinnamon in the oven? It’s the smell of comfort, the smell of happiness, the smell of a cosy home.

But how do you create that smell without the calories and the health side-effects?

One of my favourite recipes is what I call Apple Lassies (a name my kids gave to the dish when they were younger – it’s a long story).

Basically you halve and core green apples and get them ready facing up on a baking tray. Then you make a healthy mixture of chopped walnuts mixed with cinnamon and natural maple syrup, with a bit of coconut oil.

Toss it well so the mixture is well coated, then drop a spoonful of this mixture inside the cored apples (if you want to put more of this mixture just make a bigger bowl of the apples).

Once you’ve filled all the apple halves, put the baking tray in the oven and bake on medium heat for about half an hour or until the apples are soft and the smell is filling your kitchen.

A quick and healthy dessert that will get everyone interested.
