Chef Romanito Perales from the Philippines has been cooking up a storm of innovations at the Delmun International Hotel in Manama.

He has been in the kingdom for 25 years and has been with the hotel for the past seven years. Prior to coming to Bahrain he worked with the First Class Seafood Restaurant and Manila Peninsula Hotel in the Philippines.
He said: “It has been my passion to cook ever since my childhood. I have always loved the idea of innovative cooking.”
Complimented often for introducing creative, authentic and cost-conscious dishes, his kitchen comes stacked with spices, condiments and appropriate sauces that he feels are the basic ingredients for cooking.
Someday he hopes to cook a Spanish meal for the President of Philippines – Gloria Macapagal Arroyo.
The hotel is promoting Filipino food items like the halo-halo, a sweet snack and sago during the summer at the poolside.
An Indian Food Festival is scheduled at the Café Sayah from August 16 to 31 in co-ordination with Indian chef – Mangal Singh. A second Filipino Food Festival is also being planned and will be staged by the end of this year.
Chef Romanito, 54, shares one of his favourite dishes ‘Seafood paella’ with GulfWeekly readers.
