Aurelio Petraglia, Executive Sous Chef of the Banyan Tree Desert Spa and Resort, Al Areen has joined the company in June 2007.

Fluent in English and Spanish, Aurelio has brought with him over 12 years of culinary expertise.

His previous working experiences include Sheraton Grande Laguna Phuket where he has held the position of Executive Sous Chef, various establishments in Canada as well as in Dubai.

Aurelio undertook his apprenticeship at the Fairmont Royal York Hotel which saw him being selected by the Canadian government to undergo a two-month international internship exchange at the famous Hotel Bernard Loiseau in France.

In his capacity of Executive Sous Chef of Banyan Tree, Al Areen, Aurelio is in charge of the day-to-day kitchen operations of the resort with its three restaurants, lobby lounge and in-villa dining.
