Salmon & zander fish tartar, vegetable salad, red radish vinaigrette

Serves four persons

Ingredients

200gm Clean Zander fillet

200gm Clean salmon fillet

60gm Coarse chopped Japanese cucumber

60gm Red radish cut in small cubes

60gm Fennel cut in small cubes

30gm Chopped onions

10gm Chopped fresh dill

Garnish

Top tartar with a bouquet of mixed salad and orange wedges.

Red radish dressing (20 persons)

4 Dl Extra virgin olive oil

2 Dl Red wine vinegar

50gm Chopped mint

100gm Minced red radish

1/4 Dl Pernod

Salt and pepper

Mix all the above well together to a dressing
