JUST popping out for a burger has a whole new meaning at Plums, the Ritz- Carlton restaurant has introduced the 'Wow' burger featuring Japanese Wagyu beef and thick slices of Foie Gras and costing a whopping BD49.

The Wow burger is the creation of newly appointed Chef de Cuisine Frenchman,Gerald Genson, who has also brought in a new menu featuring the likes of seared lemon-paprika scallops and Maine lobster alongside prime beef cuts.

Plums has become the island's only restaurant serving USDA Prime Certified Angus Beef, which represents only the top three per cent of total US beef production and Australian Gold Beef, again from the country's top selection of animals fed on grain for 250 days.

And it has also introduced Certified Japanese Wagyu Beef, the intensively marbled meat which melts on the tongue. All Wagyu cattle are born and raised in Japan and each has a registered lineage certificate.

Chef Gerald said: "My concept for Plums is to focus on the steak house image with a French twist. Our objective is to increase the quality of the menu by the quality of the meat and dishes to move it up to the next level."

The 29-year-old set his heart on a career in the kitchen at an early age. He said: "My Godfather in Nice is a chef and when I was nine-years-old, I caught a sea bream and I asked him to cook it. He showed me how to do it and since then I wanted to be like my Godfather, so that's how I decided to become a chef."

A keen golfer and vintage car buff Chef Gerald said he is enjoying working at the Ritz-Carlton adding: "I am doing very well and my team supports me a lot. We help each other to grow better every day as perfection has no limit in the kitchen.

"We have a really good team-work ambience and that is the most important thing for me. We changed the menu three weeks ago and we have already had a lot of positive reactions to the changes we have made.

"And the open exhibition kitchen invites diners to witness the magic of our culinary team as they fan the flames that gently caress the flavours into the finest meats, poultry and fish."

Here Chef Gerald shares the recipe for the Wow burger, with Gulf Weekly readers.
