Quinoa Delight Salad

Gulf Weekly Quinoa Delight Salad

Ingredients:
Diced carrots 100gm carrots
Diced celery 100gm
pumpkin seeds 100gm
dry cranberries 100 gm
One red apple shredded
roast quinoa   250gms
vegetable stock to thicken

Dressing:

Juice from one lemon
sesame oil 75ml
honey  60ml
olive oil 50ml
garlic salt ¼ tsp

Procedure:
When the top portion of the ingredients are mixed together place 700gm of the mix in a separate bowl and add the dressing to this portion and put the rest in the fridge in a closed container for later use (up to three days).
 
Mix all together and add ¼ cup of dressing mix in a bit at a time. Do not let the honey settle on the bottom of the dressing.

After gently mixing the dressing into the quinoa mix you should add some sesame oil and a hint of honey and a touch of garlic salt.
