Best desserts for festive season

Since this is the month where people have the most desserts, I thought I’d share a few healthy dessert recipes to make your holidays just as enjoyable but without the guilt.

Date Slices Recipe
225g (8oz) pitted dates
50ml (5oz) filtered water
175g (6oz) spelt flour or plain wholemeal flour
175g (6oz) porridge oats
175g (6oz) butter or unhydrogenated margarine
¼ cup crushed walnuts
1 tbsp dessicated coconut (powder/flakes)
½ tsp cinnamon

Preheat the oven to 190C or 375F and grease a small square baking tin.

Put the dates in a saucepan with 50ml (5oz) filtered water and simmer until the dates are soft and mushy. Whizz them in the blender until you get a smooth date puree. Put to one side to cool down.

Meanwhile, sift the flour into a bowl and add the oats and the cinnamon and the butter. Rub the butter into the flour mixture and add 2-4 tbsp filtered water to create a dough.
 
Put half the dough into the greased tin and press it down flat. Place the date puree on top and smooth it out with a knife. Sprinkle the walnuts and coconut on top of the dates. Roll out the remaining dough and place on top, pressing down firmly.
 
Bake in the oven for half and hour. Leave to cool, then cut into small squares.
