Gulf Weekly Pink hummus

WHEN you’re looking for a snack, what criteria do you look for?

Does your snack give you enough nutrients? Does it keep hunger at bay long enough so that you’re not starving or bingeing at the next meal? Is it easy to make and eat in a short period of time (this is very important for many)?

We can answer ‘yes’ to all these questions if we made the delicious Pink Hummus.
To make it, you need:
*¾ cup raw almonds (soaked in water overnight)
*¼ cup green olives (without pits)
*Juice of half a lemon
*½ a fresh tomato and 5 slices of sundried tomatoes
*¼ cup olive oil
*1 clove of garlic, crushed
*And the best part, a generous sprinkle of zaatar

Mix all the ingredients well in the food processor until you get Pink Hummus!
The best thing about it is that is doesn’t spoil easily so it can sit in your fridge in a sealed jar for a few days to give you many happy snack experiences.

And you can eat it with many things including vegetable sticks, rice cakes, wholemeal crackers, or even lettuce.

This Pink Hummus is delicious because it has a distinct savoury taste and it’s very filling. And most importantly, it’s healthy and nutritious. Bon appetit!
