Sweet treats for the holidays

Since this is the month where people have the most desserts, I thought I’d share a few healthy dessert recipes to make your holidays just as enjoyable but without the guilt.

Raw apple pie Recipe
For the crust:
- 2 1/4 cups ground almonds
- 3/4 cup pitted dates
- 1/4 teaspoon salt

Process together in a food processor until it is well mixed together.

Flatten the crust into a pie plate or a cheesecake plate. Press it down.

Store in the freezer for 15 minutes.

Optional: if you feel the crust is too flaky, you can add more dates.
For the filling:
- 2 apples, peeled and thinly sliced
- 3 tablespoons fresh lemon juice
- 2 apples, peeled and chopped
- 1/2 cup pitted dates (soaked)
- 1/2 cup raisins (soaked)
- 1/4 teaspoon ground cinnamon

Toss the sliced apples with 2 tbsp lemon juice and set aside.

Place the chopped apples, dates, raisins, cinnamon, and remaining 1tbsp. lemon juice in a food processor and process until smooth.  Remove from the food processor and mix with the sliced apples.

Remove the crust from the freezer. Pour the apple filling into it and press down with a rubber spatula.
Bring to room temperature or warm in a slow oven (do not cook).

To serve, sprinkle with chopped walnuts, and sprinkle with cinnamon powder and desiccated coconut.
